Almost Spring In Indiana

   Snow flurries, despite blooming daffodils and some grass mowing.  Spring in Indiana.  It could be worse, some states are being hit with snowstorms.
   My touch of spring includes seed starting.  Cockscomb seed smaller than a grain of salt still bewilder me.  How can I get them spaced right?
   But as Eric Carle, author of children’s books said, “A lot of things get done in this world by people who don’t know what they are doing, if they did know better, they might not even try.”
   So I turn to food, my all-time favorite topic.   I saw a similar recipe in the New York Times recently.  Here is my tried and true recipe.
            Granola
6 cups rolled oats (Quick oats)
1 cup coconut
1 or 2 cups coarsely chopped nuts
1 Tablespoon cinnamon
½ cup coconut oil
½ cup local honey or real maple syrup

Liquefy coconut oil if needed. Combine all ingredients in long, flat baking pan.  Bake at 300 degrees for 45 minutes, stirring after each 15 minutes.
Cool, add 1 cup raisins or dried cherries. Mix and store  in lidded containers.



A cup or less of this with milk or yogurt for breakfast will get you going on the day.  If you have a bit of fresh fruit to add, that makes it special.

   For a quick and easy dessert--butter a baking dish, add sliced apples.  Cover with granola, add a little water and bake for about 30 minutes.  You could add a dollop of whipped cream or ice cream.  Great!
